Deviled Fish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mince the fish coarsely.

  2. In a saucepan, melt the butter and add flour to make a thick sauce.

  3. Gradually stir in the milk until smooth.

  4. Add the minced fish, finely mashed egg yolks, parsley, and seasonings to the sauce.

  5. Grease a baking dish or scallop shells with butter.

  6. Fill the dish with the fish mixture and sprinkle breadcrumbs on top.

  7. Bake in a 400°F (200°C) oven until browned.
