What each ingredient does

Sirloin
Is the main cut of meat, cooked by broiling to be tender and browned on the surface.
Onions
Cooked slowly until sweet and soft, they form the base layer that flavours the steak.
Strained tomato
Adds acidity and body to the sauce while simmering down into a smooth, thick mixture.
Salt pork
Its rendered fat cooks the onions, adding savoury richness and flavour to the dish.

The step that matters

Cooking the onions slowly. Cooking onions slowly over moderate heat softens them and draws out sweetness. If they brown too quickly, they turn bitter and the sauce loses its gentle, mellow flavour.

Swap the onion

How well each one fits the dish's main ingredients (pork, tomato, pepper):

  1. Capsicumfits better
