Why it works: Veal and pork are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 4,930 recipes. Both carry 4-heptenal, which smells creamy, biscuit. The science ↓
Veal Loaf
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
In a bowl, combine the chopped veal, chopped salt pork, half of the crushed crackers, eggs, pepper, and salt.
Mix everything together until well combined and form into a solid loaf.
Spread the remaining crushed crackers smoothly over the outside of the loaf.
Bake and serve
Place the loaf in a baking dish with a little hot water and baste it two or three times while baking.
Bake at 350°F (175°C) for one hour and serve cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Forms the main body of the loaf, giving it a firm, meaty texture.
- Salt pork
- Adds fat and moisture, keeping the lean veal from drying out.
- Crackers
- Absorb juices and help bind the mixture into a loaf.
- Eggs
- Bind the mixture together and set firm as the loaf cooks.
The step that matters
Basting the loaf while it bakes. Veal is lean and dries out easily in the oven. Adding hot water to the dish and basting the loaf keeps its surface moist and helps it cook evenly.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
