Stuffed Peppers

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the stems off the peppers and remove the seeds carefully.

  2. Soak the emptied peppers in ice-cold water with coarse sea salt for 1 hour.

  3. Mix the minced meat with bread crumbs or cold boiled rice to avoid sogginess.

  4. Season the mixture with onion juice, salt, butter, gravy, and tomato juice if using.

  5. Fill the peppers with the mixture and pack them upright in a baking dish.

  6. Pour gravy between the peppers and sprinkle bread crumbs on top.

  7. Cover and bake at 350°F (175°C) for 30 minutes, then uncover to brown.
