Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Bind the mixture and help it set firmly when cooked.
Mashed potatoes
Form the bulk of the croquette, giving a soft, tender interior.
Cream
Adds moisture and richness to the potato mixture.
Butter
Adds fat for richness and a smooth texture.

The step that matters

Cooking the mixture until it leaves the sides of the pan. Cooking drives off excess moisture and firms the egg-enriched mixture. If it stays wet, the croquettes will be too soft to shape and may fall apart or burst in the hot oil.
