What each ingredient does

Rice
Starch that softens in milk and thickens the mixture into a binding base for shaping.
Milk
Liquid that the rice absorbs as it cooks, giving a creamy, tender interior.
Egg
Binds the mixture together and sets during handling, helping croquettes hold their shape.
Bread crumbs
Form a crisp outer coating that browns when fried.
Butter
Adds fat for richness and a softer, more flavorful interior.

The step that matters

Cool the mixture before shaping. Cooling firms the starch and egg so the mixture can be handled. Shaping it warm leads to sticky, fragile croquettes that can break or lose their shape in the oil.

Swap the white pepper

How well each one fits the dish's main ingredients (rice, milk, butter, egg, parsley, bread):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Capersfits better
