Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the white sauce

  1. Melt the butter in a saucepan.

  2. Stir in the flour, salt, and white pepper.

  3. Add the hot milk and stir until the mixture thickens smoothly.

Add the salsify

  1. Add the cooked and diced salsify and simmer for five minutes.

Bake and serve

  1. For a scallop or au gratin, transfer the mixture to a deep buttered dish.

  2. Sprinkle with stale bread crumbs moistened with melted butter.

  3. Brown in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk into a smooth white sauce that coats the salsify.
Butter
Adds richness and carries the flour so it cooks without lumps.
Milk
Forms the liquid base of the sauce, giving body and a creamy texture.
Salsify
Provides the main vegetable and its mild, delicate flavour.
Bread crumbs
Form a crisp topping that browns in the oven.

The step that matters

Stirring the hot milk into the flour and butter. Adding the hot milk to the roux while stirring constantly keeps the flour dispersed, so the sauce thickens smoothly instead of forming lumps.
