Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the strawberries

  1. Stem, wash, and mash the strawberries very fine.

  2. Mix the strawberries with 1½ cups of sugar.

Make the sponge cake

  1. Beat the yolks of 3 eggs with 1 cup of sugar until creamy.

  2. Add the beaten egg whites to the yolk mixture.

  3. Stir in 1 cup of sifted flour and 5 tablespoons of boiling water.

  4. Add another cup of flour mixed with 1 teaspoon of baking powder.

  5. Flavor with vanilla or lemon.

  6. Bake the sponge cake in a moderate oven (350°F / 175°C) until golden.

Assemble and serve

  1. Once the cake is ready, layer it with the mashed strawberries.

  2. Serve with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped yolks and whites give the sponge cake its light, airy structure.
Flour
Provides the structure that holds the sponge cake together as it bakes.
Sugar
Sweetens the berries and helps the sponge cake batter whip and brown.
Baking powder
Releases gas during baking so the sponge cake rises.
Strawberries
Add fruit moisture, sweetness, and acidity to the layers.

The step that matters

Beating the egg whites into the yolks. Whipped egg whites trap air that makes the sponge rise; deflating them by overmixing or letting them sit leaves a dense, flat cake.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, egg, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against sugar, egg, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
