Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides fruit flavour and tartness that balances the sweetness of the sugar.
Sugar
Sweetens the pineapple and helps it cook down into a thick, syrupy base.
Silver white gelatin
Sets the mixture so it holds its shape when chilled and unmoulded.
Heavy cream
Adds richness and a light, airy texture when whipped and folded in.

The step that matters

Stir the hot water into the soaked gelatin until dissolved. Gelatin only sets properly when fully dissolved. Undissolved granules leave soft or grainy spots, and the gelatin must be liquid but not boiling so it sets evenly as the mixture cools.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, gelatin, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Pineapplethe original

Fit is the average pairing score against sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
