Directions

Make the chocolate milk

  1. Sweeten the milk with sugar.

  3. Remove from heat and add the remaining milk without boiling.

  4. Stir in the vanilla and ensure the mixture is lukewarm.

Set and serve

  1. Dissolve the junket tablet in the mixture as you would for plain junket.

  2. Pour into serving dishes and leave undisturbed until firm.

  3. Cool and serve, optionally topped with sweetened whipped cream flavored with vanilla.

What each ingredient does

Milk
Forms the body of the dessert and, with the junket tablet, sets into a soft custard.
Junket tablet
Contains rennet, which coagulates the milk proteins so the mixture sets into a soft, spoonable curd.
Sugar
Sweetens the milk and balances the chocolate flavor.
Chocolate or cocoa
Provides the chocolate flavor and color.

The step that matters

Add the remaining milk without boiling, and keep the mixture lukewarm before adding the junket tablet.. Rennet works best at lukewarm temperatures; if the milk is too hot, the enzyme can be weakened or destroyed, so the mixture may fail to set firmly.
