Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Frozen Banana Whip

Ingredients

Directions

Prepare the base

  1. Peel the bananas and run them through a sieve.

  2. Stir in the orange juice and powdered sugar.

  3. Soak the gelatin in cold water until melted, then strain it over the fruit mixture.

Add the cream

  1. When the mixture begins to stiffen, gently fold in the whipped cream.

Freeze

  1. Pour the mixture into a wetted mold and ensure the cover fits tightly.

  2. Cover with two layers of waxed paper or bind with a buttered muslin strip.

  3. Bury the mold in a mixture of crushed ice and rock salt (2 parts ice to 1 part salt) for 2 hours.

  4. For a firmer texture, let it stand for 4 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main body, sweetness and moisture of the whip.
Heavy cream
Whipped air and fat give the frozen dessert a light, creamy texture.
Gelatin
Sets the fruit mixture so it holds a firm, sliceable body when frozen.
Powdered sugar
Adds sweetness and dissolves smoothly into the fruit purée.
Orange juice
Adds acidity and bright flavour that balances the sweetness.

The step that matters

Fold the cream as the mixture begins to stiffen. Gelatin starts to set as the mixture cools. Folding in the cream at this point keeps the whipped air trapped. Folding too early lets the cream deflate, and folding too late leaves streaks and a dense, uneven texture.

Swap the orange

How well each one fits the dish's main ingredients (banana, sugar, gelatin, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Orangethe original

Fit is the average pairing score against banana, sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
