What each ingredient does

Raisins
Soaked and simmered to release their sweetness and flavor into the base.
Sugar
Sweetens the punch and, when boiled, helps build the syrup's body.
Lemon juice
Adds acidity that balances the sweetness of the sugar and fruit.
Orange juice
Adds fruity sweetness and acidity, giving the punch its citrus character.
Claret
Provides the wine base, adding body, tannin and red wine flavor.
Apollinaris water
Adds carbonation, lightening the punch and giving it a lively effervescence.

The step that matters

Strain and chill thoroughly. Straining removes raisin, spice and rind solids so the punch stays clear. Chilling the syrup before adding it to wine and carbonated water keeps the mixture cold and prevents the carbonation from fizzing out too quickly.

Swap the raisin

How well each one fits the dish's main ingredients (cinnamon, sugar, lemon, orange, pineapple, mint):

  1. Limefits better
  2. Vanillafits better
  3. Cranberryfits better
  4. Raisinthe original

Fit is the average pairing score against cinnamon, sugar, lemon, orange, pineapple, mint. Candidates are from the same food group and used in at least 100 recipes.
