Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meaty flavor, and long simmering draws collagen out to give the broth body.
Carrots
Add gentle sweetness and aroma to the broth.
Turnips
Add earthy flavor and a mild sweetness as they cook.
Onions
Contribute savory aroma and depth to the broth.

The step that matters

Simmer slowly for 4 hours. Keeping the broth at a gentle simmer rather than a hard boil keeps it clear, because vigorous boiling breaks up fat and proteins into the liquid, making it cloudy and greasy. A slow simmer still extracts flavor and body from the mutton over the long cooking time.

Swap the onion

How well each one fits the dish's main ingredients (mutton, carrot, turnip):

  1. Leekfits better
  2. Parsnipfits better
  3. Beetrootfits better
  4. Onionthe original

Fit is the average pairing score against mutton, carrot, turnip. Candidates are from the same food group and used in at least 100 recipes.
