Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into the sauce to provide the main flavor and rich, creamy body.
Egg
Stirred in at the end to thicken the sauce slightly and add richness.
Butter
Adds fat for smooth texture and helps the cheese melt evenly.
Milk or cream
Forms the liquid base that makes the cheese sauce pourable and smooth.

The step that matters

Adding the egg at the end. Egg proteins set when heated, so the beaten egg should be stirred in just before serving over gentle heat. If it is added to a hot, boiling mixture, it can scramble and leave the sauce grainy.
