Make the syrup and gelatin

  1. Pour the juice off the pineapple and soak the gelatin in half of it.

  2. Boil the other half of the juice with the sugar until it reaches a heavy syrup consistency.

  3. Add the dissolved gelatin to the syrup and set aside to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped to trap air, giving the cream a light, airy texture.
Gelatin
Sets the mixture so it holds its shape when unmolded.
Sugar
Sweetens the syrup and adds body to the pineapple juice.
Pineapple
Adds fruit flavor and acidity to the cream.

The step that matters

Whip the cream until very stiff. Cream that is under-whipped will not hold enough air to keep the finished cream light, and gently folding in the syrup and gelatin keeps that air from collapsing. Gelatin must also be fully dissolved before it is added, or it can set in lumps.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream, gelatin):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream, gelatin. Candidates are from the same food group and used in at least 100 recipes.
