Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Beef Loaf
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the loaf
In a bowl, combine the beef, onion juice, parsley, salt, and pepper.
Beat the egg and pour it over the meat mixture, then mix thoroughly.
Form the mixture into a roll about 6 inches long.
Bake and serve
Melt the dripping in a small baking pan.
Place the roll in the pan and bake at 400°F (200°C) for 30 minutes, basting every 10 minutes.
Transfer to a hot dish and keep warm while making the sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lean beef
- Provides the main body of the loaf and its meaty flavour.
- Egg
- Binds the chopped meat so the roll holds its shape when sliced.
- Dripping
- Adds fat that moistens the surface and helps it brown in the pan.
The step that matters
Basting the roll every 10 minutes. Lean meat dries out easily in the oven. Spooning the melted fat back over the roll keeps the surface moist and encourages even browning during the 30 minutes of baking.
Swap the onion
How well each one fits the dish's main ingredients (beef, parsley, pepper, egg):

Fit is the average pairing score against beef, parsley, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
