Maple Cream

Ingredients

Directions

Make the syrup

  1. In a bowl, combine brown sugar, butter the size of a goose egg, and cream or rich milk.

  2. Dissolve cream of tartar in water and add to the mixture, stirring well.

  3. Place the mixture over heat and boil for several minutes, stirring lightly to prevent settling.

  4. Test in very cold water until it forms a soft ball.

  5. Remove from heat and let cool.

Finish and set

  1. Stir until it reaches the consistency of heavy cream.

  2. Add vanilla, pour into a buttered pan, and cut into squares when cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and the caramel flavor of the fudge-like candy.
Cream or rich milk
Adds fat and moisture, giving the finished candy a smooth, creamy texture.
Butter
Adds fat for richness and helps keep the candy smooth and tender.
Cream of tartar
An acid that helps prevent sugar crystals from growing too large, keeping the texture smooth.

The step that matters

Stir until it reaches the consistency of heavy cream. Stirring only after the mixture has cooled lets sugar form fine crystals, giving a smooth texture. Stirring too early or too late can leave it grainy or too hard to shape.
