What each ingredient does

Strawberries
Provide the fruit, flavor, and bulk of the preserves.
Sugar
Sweetens the fruit and concentrates the syrup so it can thicken and set while preserving the fruit.

The step that matters

Cook the syrup until it almost sets. Sugar syrup thickens as water evaporates and its concentration rises. Stopping too early leaves the preserves runny, while cooking too long makes them stiff and candied. A cold saucer test shows when it is ready.
