Beef Bouilli in Different Ways

Ingredients

Directions

  1. Turn the beef two or three times until hot, then reduce heat and cover with hot ashes; cook for 1.5 hours.

  2. Serve with the cooking sauce.

  3. For the Provencale style, dress the brisket with oil instead of butter, then serve with a sauce made from fried onions, vinegar, stock, salt, and pepper.

  4. For another method, bone the brisket, beat it, and baste with oil, lemon slices, onions, parsley, salt, and pepper.

  5. Grill the brisket on high heat the next day and serve with a piquant sauce.
