Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw egg yolks
Emulsify the oil into the mixture so the dressing thickens smoothly.
Hard-boiled egg yolks
Add body and a smooth, creamy texture to the dressing.
Fresh sweet oil
Provides fat and richness, forming the body of the dressing as it is beaten in.
Vinegar
Adds acidity that sharpens the flavour and thins the dressing to the desired consistency.

The step that matters

Slowly pour in the oil while beating. Oil must be added gradually so the egg yolks can hold it in a stable emulsion. Pouring too fast causes the mixture to split and fail to thicken.
