Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the pickle and absorb the brine and flavour.
Coarse sea salt
Draws moisture out of the vegetables, firming them and helping preserve them.
Mustard seed
Adds sharp, pungent flavour that stands up to the vinegar.
Grated horseradish
Contributes pungent heat that mellows as the pickle sits.
Boiling vinegar
Adds acidity that sharpens the flavour and helps preserve the pickle.

The step that matters

Draining after salting. Salt draws water out of the vegetables overnight. Draining well removes that liquid so the pickle stays crisp and the vinegar is not diluted.

Swap the tomato

How well each one fits the dish's main ingredients (onion, pepper, mustard, allspice, clove, horseradish, vinegar):

  1. Shallotfits better

  3. Broccolifits better
  4. Tomatothe original

Fit is the average pairing score against onion, pepper, mustard, allspice, clove, horseradish, vinegar. Candidates are from the same food group and used in at least 100 recipes.
