Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Combine grated carrots, chopped suet, raisins, currants, sugar, flour, and spices in a large bowl. Mix well until all ingredients are combined.

  2. Transfer the mixture to a pudding mold.

Cook and serve

  1. Boil the pudding for 4 hours.

  2. After boiling, place the pudding in a 400°F (200°C) oven for 20 minutes.

  3. Serve with wine sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the bulk, moisture and sweetness of the pudding.
Suet
Adds richness and fat, giving the pudding a tender, moist texture.
Flour
Gives structure by binding the mixture as it cooks.
Sugar
Adds sweetness and helps with browning in the oven.

The step that matters

Boiling, then oven finish. The long boil cooks the pudding through gently while the short oven stage firms and browns its surface. Skipping the sequence or changing the timing can leave the texture heavy or the exterior pale.

Swap the currant

How well each one fits the dish's main ingredients (carrot, raisin, sugar, flour):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against carrot, raisin, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
