Why it works: Rice and almond match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and 1,456 recipes mention both. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Blanc-Mange

Ingredients

Directions

Prepare

  1. If using laurel leaves, steep them in the milk before adding the rice and remove them before cooking.

  2. Bring milk to a boil in a saucepan.

Cook and set

  1. Quickly stir in the rice and let it boil for about 10 minutes, stirring constantly until it pulls away from the sides.

  2. Grease a mold with pure salad oil and pour in the rice mixture.

  3. Let it set until firm, preferably overnight.

Serve

  1. To serve, turn out the blanc-mange and garnish with jam or pour around a fruit compote.

What each ingredient does

Rice
Its starch thickens the milk as it cooks, giving the blanc-mange a firm, sliceable set.
Milk
Forms the liquid base that the rice starch thickens into a creamy, delicate dessert.

The step that matters

Stirring the rice constantly while it boils. Rice starch settles and scorches on the bottom of the pan if left unstirred, and the milk can boil over or burn. Constant stirring keeps the starch dispersed so the mixture thickens evenly and sets smooth.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (rice, milk, laurel):

  4. Almondthe original

Fit is the average pairing score against rice, milk, laurel. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
