What each ingredient does

Lemons
Their rind oils flavour the spirit, and their juice adds sharp acidity that balances the sweetness.
Brandy or rum
Dissolves the aromatic rind oils and gives the punch its alcohol, which helps it keep.
Loaf sugar
Sweetens the punch and balances the acidity of the lemon juice.
Milk
Adds richness and a creamy body, and its proteins curdle with the acid to clarify the punch.
Grated nutmegs
Contributes warm, spiced aroma to the punch.

The step that matters

Adding the boiling milk to the mixture. The hot milk curdles when it meets the acidic lemon mixture. The curds are then removed by straining, which leaves the punch clear. Adding the milk too cool or unevenly can leave it cloudy or poorly separated.

Swap the lemon
