Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the batter's structure, setting as it cooks around the clams.
Eggs
Bind the batter and help it set firm when fried.
Milk
Adds moisture and softness to the batter.
Clams
Provide the main flavor and texture within the fritters.

The step that matters

Drop spoonfuls into hot fat. The fat must be hot enough to sear the batter quickly. If it is too cool, the fritters absorb grease, turn heavy and brown unevenly.
