Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the milk mixture into a soft, sliceable cream when chilled.
Egg yolks
Thicken the custard and add richness and colour.
Egg whites
Whipped and folded in, they lighten the cream and add airy texture.
Milk
Forms the base of the cream and provides most of its liquid.
Sugar
Sweetens the cream and softens its flavour.

The step that matters

Fold in the beaten egg whites. Egg whites hold air only when beaten to the right stiffness and folded gently. Overmixing knocks the air out, leaving a dense, flat cream instead of a light one.
