What each ingredient does

Sarsaparilla root
Provides the main flavour of the infused liquid base.
Granulated sugar
Adds sweetness and body to the syrup and helps preserve it.
Tartaric acid
Adds sharp acidity and, with carbonate soda, produces the fizz.
Carbonate soda
Reacts with the acid to release carbon dioxide, creating foam and fizz.

The step that matters

Adding the carbonate soda to foam. Carbonate soda reacts with the acid in the syrup to release carbon dioxide. Adding it too early, before serving, lets the fizz escape, so it is added to each glass just before drinking.
