What each ingredient does

Beef
Gives the broth its meaty flavour as it simmers in the water.
Egg white and shell
Clarifies the broth, as the proteins bind cloudy particles that are then strained out.
Sherry
Adds a light, aromatic sweetness and acidity to the finished soup.

The step that matters

Add the egg white and shell to the broth, reheat, and beat with a spoon.. Reheating must be gentle and the broth must not be stirred hard, because the egg white needs to coagulate and trap cloudy particles. Stirring too vigorously breaks up the raft, leaving the broth cloudy.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, egg, sherry):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, egg, sherry. Candidates are from the same food group and used in at least 100 recipes.
