Dressed Crab

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Cook the crabs

  1. Ensure the crabs are alive when purchased.

  2. Place crabs in a large pot of cold water and bring to a boil.

  3. Cook for 5 to 10 minutes, then remove from heat.

  4. Open the center pocket, discard the insides, and clean the shell.

  5. Cut off the claws and extract the meat using a skewer for smaller pieces.

Fill and bake

  1. In a bowl, combine crab meat with bread crumbs, salt, black pepper, and cayenne pepper.

  2. Mix well and fill the cleaned shell with the mixture.

  3. Dot with butter and reheat in a 350°F (175°C) oven until warm.

What each ingredient does

Crabs
Provide the sweet meat that forms the main body of the dish.
Fresh bread crumbs
Absorb moisture and bind the crab meat so it holds together in the shell.
Butter
Adds richness and moisture to the top as it melts during reheating.
