Why it works: Pepper and lime match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 3,491 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Shrimp Patties

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out flaky pastry fairly thin and stamp out rounds with a tumbler.

  2. Stamp three smaller rounds with a glass and cut a hole in the center of each.

  3. Place the three rings on a round pastry, add a piece of dry bread in the center, and top with a small round of pastry.

  4. Bake in a 400°F (200°C) oven until golden.

  5. Once baked, lift onto a sieve, remove the tops, and take out the bread.

  6. Fill the pastry with boiled shrimps mixed with white sauce, cayenne pepper, lime juice, and amchoy sauce.

  7. Place the small round of pastry back on top.
