Strawberry Ring

Ingredients

Directions

Prepare the strawberry base

  1. Hull and wash enough strawberries to make 1 pint of pulp, then rub through a fine sieve.

  2. Soak the gelatine in the water until soft, then dissolve it over hot water and add the sugar.

  3. Stir the dissolved gelatine and sugar into the strawberry pulp.

Set and serve

  1. Pour the mixture into a ring mold and put it on ice until firm.

  2. Once firm, turn out the mold and fill the center with whole berries, then heap the whipped cream around the base.

What each ingredient does

Gelatine
Sets the pulp into a firm, sliceable ring as it cools.
Strawberry pulp
Provides the main strawberry flavor and color, and the bulk of the set dessert.
Sugar
Sweetens the pulp and balances the tartness of the strawberries.
Whipped cream
Adds a light, creamy texture and richness alongside the firm gelatine.

The step that matters

Dissolving the gelatine fully. Gelatine must be softened in cold water and then dissolved completely over heat before mixing. Undissolved granules leave gritty specks and weak spots, so the ring may not set evenly.

Swap the strawberry

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
