What each ingredient does

Granulated gelatine
Sets the liquid mixture so the loaf holds its shape when chilled.
Red raspberries
Provide the main flavour and pink colour of the loaf.
Cream
Adds richness and a light, airy texture when whipped stiff and folded in.
Sliced almonds
Add crunch and a nutty contrast to the soft, set texture.

The step that matters

Cool the gelatine before folding in the cream. If the gelatine mixture is still hot, it can melt the whipped cream and deflate it, so the loaf will not hold its airy texture. Letting it cool first keeps the fold light.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
