Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Parboil the chicken until perfectly tender.

  2. Grease the sides of a baking pan and line it with dough rolled to ¼ inch thick.

  3. Layer the bottom of the pan with chicken, then add a layer of dumplings, followed by another layer of chicken.

  4. Sprinkle black pepper and scatter generous lumps of butter over the layers.

  5. If the chicken was not salted enough during parboiling, sprinkle in some coarse sea salt.

  6. Add the water used to boil the chicken before covering with a perforated top crust to allow steam to escape.

  7. Bake in a moderate oven at 350°F (175°C) until golden brown.
