Corn Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Mix the batter

  1. In a large bowl, combine cornmeal, flour, sweet milk, buttermilk, molasses, sugar, baking soda, and salt. Mix until well combined.

Steam and bake

  1. Steam the mixture for 2 hours.

  2. After steaming, bake in a preheated oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the main body and grainy structure of the bread.
All-purpose flour
Adds gluten-forming structure so the cornbread holds together.
Buttermilk
Its acidity reacts with baking soda to help the bread rise and adds tenderness.
Molasses
Adds sweetness, moisture, and a darker color with deep flavor.
Baking soda
Reacts with the acidic buttermilk and molasses to produce gas for rising.

The step that matters

Steam for the full 2 hours. Steaming sets the moist, dense crumb before baking. Cutting the steaming short can leave the center underset and gummy, and the baking step alone cannot fully make up for it.
