Cream Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Soak the tapioca in enough water to cover it overnight.

  2. In the morning, add boiling hot milk to the soaked tapioca and boil for 15 minutes.

Make the pudding

  1. Beat the egg yolks with the sugar.

  2. Add the coconut and stir into the mixture.

  3. Boil for an additional 10 minutes.

  4. Pour the mixture into a pudding dish.

Top and brown

  1. Beat the egg whites with 3 tablespoons of sugar until stiff.

  2. Spread the stiff egg whites over the top of the pudding.

  3. Sprinkle with coconut.

  4. Brown in a 400°F (200°C) oven for 5 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and boiling to thicken the milk into a pudding.
Milk
Forms the liquid base that the tapioca thickens into a creamy custard.
Eggs
Yolks enrich and thicken the pudding; whites whipped to stiff peaks form the topping.
Sugar
Sweetens the pudding and helps the whipped egg whites hold their shape.
Grated coconut
Adds aroma and flavor, and gives the pudding and topping a toasty finish.

The step that matters

Beat the egg whites until stiff. Whites must be whipped to firm peaks before spreading, since properly whipped foam holds its shape and browns evenly in the oven. Underwhipped whites can slump and weep.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
