Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the ketchup

  1. Combine the sifted tomatoes, vinegar, sugar, cinnamon, cayenne pepper, and coarse sea salt in a large pot.

  2. Bring the mixture to a boil over medium heat, then reduce to a simmer.

  3. Cook for about 1 to 2 hours, stirring occasionally, until thickened.

Bottle

  1. Pour the hot catsup into sterilized bottles and seal.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, pulp and flavour that the sauce is built from.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the sauce.
Sugar
Adds sweetness that balances the acidity and tomato tang.
Cinnamon
Adds warm aroma and spice to the sauce.

The step that matters

Simmering until thickened. Long, gentle cooking evaporates water so the sauce thickens. Stirring occasionally keeps the bottom from scorching, since sugars and tomato solids burn easily on a hot pot.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, sugar, cinnamon, pepper):
