What each ingredient does

Pork
Its rendered fat carries the flavour and gives the chowder a savoury base.
Potatoes
Their starch softens during simmering and thickens the broth while giving body to the chowder.
Milk
Adds creaminess and a mild sweetness that rounds out the broth.
Flour
Thickens the milk through its starch, giving the chowder a smooth, body-rich texture.
Oysters
Contribute a briny, delicate seafood flavour and tender texture when briefly heated.

The step that matters

Thickening the milk with flour and fat. Flour must be blended with fat before being added to hot milk so it disperses without lumps; the starch then gelatinises as the mixture heats, thickening it evenly.
