Rye Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Sift the flour and work in the mashed potato.

  2. Scald the milk, then add sugar, molasses, shortening, salt, and water.

  3. When lukewarm, add the yeast dissolved in lukewarm water.

  4. Knead the dough well and let it rise until doubled in bulk.

  5. Shape into loaves, let rise again until doubled, and bake in a moderate oven (350°F / 175°C) for 60 minutes.
