Boiled Beef

Ingredients

Directions

  1. In a large pot, combine the beef and water.

  2. Add the salt, pepper, vinegar, and sugar.

  3. Bring to a simmer and cook slowly until the water is more than half gone.

  4. Skim off the grease and continue cooking until only about 1 cup of liquid remains for gravy.

  5. If the liquid evaporates too quickly, add boiling water as needed.

  6. The beef should be very tender and can be served cold, especially if pressed under a heavy weight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Slow simmering in water breaks down connective tissue, leaving the meat very tender.
Vinegar
Adds a mild acidity that brightens the flavor of the broth and meat.
Sugar
Adds a slight sweetness that balances the salt and acidity.

The step that matters

Skim off the grease and continue cooking until only about 1 cup of liquid remains for gravy.. Fat that is not skimmed off can remain in the reduced liquid and make the gravy greasy. Reducing slowly concentrates the flavor, while the liquid should not be allowed to boil away too quickly.
