Why it works: Carrot and turnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,002 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Braised Beef
Ingredients
Directions
The book says “a rather moderate oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the beef
Lard the beef with the salt pork.
Place 6 slices of pork in the bottom of a braising pan and heat until frying.
Add the onions, carrot, and turnip; cook until they begin to brown.
Move the vegetables to one side and add the beef, dredged with salt, pepper, and flour.
Brown the beef on all sides.
Braise
Add 1 quart of boiling water and the bouquet of sweet herbs.
Cover and cook slowly in a 300°F (150°C) oven for 4 hours, basting every 20 minutes.
Finish and serve
Finish the gravy as for braised tongue or add ½ can of tomatoes and cook for 10 minutes.
Strain the gravy, pour it around the beef, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef (in the method)
- Slow braising in liquid breaks down tough connective tissue, leaving the meat tender.
- Salt pork
- Adds fat and savory flavor that enriches the meat and the gravy.
- Onions
- Caramelize while browning, adding sweetness and depth to the gravy.
- Flour
- Dredged on the beef, it helps form a browned crust and thickens the gravy.
- Carrot and turnip
- Sweet aromatic vegetables that build flavor in the braising liquid.
The step that matters
Browning the beef on all sides. Searing creates browned flavors through the Maillard reaction. Skipping or rushing this step leaves the gravy pale and less flavorful.

Fit is the average pairing score against pork, carrot, turnip, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
