What each ingredient does

Beef trimmings
Provides the main meat structure and rich, beefy flavour in the sausage.
Pork trimmings
Adds fat, which gives the sausage moisture and a tender bite.
Saltpetre
Cures the meat, helping it hold a pink colour and resist spoilage during curing.
Water
Adds moisture to the chopped mixture, keeping the sausage juicy.

The step that matters

Smoke over a hot fire for 2 to 2.5 hours. Heat and smoke dry the surface and set the casing, while too little heat leaves the sausage under-cooked or too soft. Keeping the fire steady helps the sausage cook through evenly without burning the casing.
