Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meaty structure and protein that sets firm when chilled and dried.
Lean pork
Adds savory meat flavor and body, binding with the beef into a cohesive sausage mass.
Fat pork
Supplies fat that carries moisture and flavor and gives the sausage a tender, juicy texture.
Whole mustard seed
Adds a sharp, aromatic bite that comes through in the dried, smoked sausage.

The step that matters

Keep the meat cool while mixing and resting. Fat melts and smears when the meat warms up, so it can separate from the lean and give a greasy, crumbly texture. Keeping the mixture cold keeps the fat in small distinct pieces and helps the sausage bind and slice cleanly.
