  3. Add cold water to the pot until half full.

Simmer

  1. Bring to a boil and skim off any foam.

  2. Add chopped carrots, turnips, celery, and leeks for garnish.

  3. Use salt sparingly and avoid spices or herbs.

  4. Simmer gently for 7 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Adds body and gelatin from bones and connective tissue for a rich, full broth.
Beef
Contributes meaty flavor and gelatin to give the stock depth and body.
Cold water
Extracts flavor and gelatin from the bones and meat as it slowly heats.
Carrots
Add gentle sweetness and aromatic flavor to the broth.

The step that matters

Skim off the foam after bringing to a boil. Foam carries coagulated proteins and impurities that would cloud the stock and taint its flavor if left in the pot.

Swap the celery

How well each one fits the dish's main ingredients (veal, beef, carrot, turnip, leek):

  1. Celerythe original
  2. Parsleyfits about as well
  3. Marjoramfits about as well
  4. Thymefits less well

Fit is the average pairing score against veal, beef, carrot, turnip, leek. Candidates are from the same food group and used in at least 100 recipes.
