To Boil Salt Fish

Ingredients

Directions

  1. Soak the salt fish in a large quantity of cold water overnight.

  2. Expose the fish to the air for some time, then soak it again in water until softened.

  3. Clean the fish thoroughly and place it in a fish kettle with cold water.

  4. Heat the fish slowly, keeping it just below simmering for 45 minutes to 1 hour, depending on its weight.

  5. Remove any scum that forms on the surface carefully.

  6. Serve the fish on a hot napkin with egg sauce and boiled parsnip.
