Make the sauce

  1. In a clean saucepan, combine the bread crumbs and onion quarters.

  2. Pour in the milk and boil gently, stirring often, until the onion is tender, about 40 to 60 minutes.

  3. Press the mixture through a fine sieve.

  4. If the sauce is too thin, reduce it by boiling quickly.

  5. Add salt, nutmeg, butter, and cream, stirring until thickened.

What each ingredient does

Fine bread crumbs
Soak up the milk and thicken the sauce to a smooth, body-rich texture.
New milk
Forms the liquid base that the crumbs swell in and cook into a sauce.
Butter
Adds richness and a silky mouthfeel to the finished sauce.
Cream
Adds richness and smoothness, softening the sauce's flavour and texture.
Onion
Infuses the milk with mild savoury aroma as it simmers.

The step that matters

Boiling gently until the onion is tender. Too vigorous a boil can scorch the milk on the pan base and break the sauce, while too short a time leaves the onion raw and the flavour thin. Gentle heat with frequent stirring extracts flavour evenly and keeps the crumbs from sticking.
