Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Add sweetness and body, and their pulp helps thicken the sauce.
Crabs or other hard acid fruit
Provide sourness and bulk, forming the base of the sauce.
Brown sugar
Adds sweetness and a molasses-like depth that balances the sharpness.
Vinegar
Adds acidity and thins the mixture to a thick, pourable cream.
Cayenne pepper
Supplies heat and pungency.
Powdered ginger
Contributes warm, aromatic spice.

The step that matters

Grinding the spices fine before mixing. Spices that stay coarse won't dissolve evenly into the fruit base, leaving gritty pockets and uneven heat. Grinding each spice separately and adding them one at a time lets them distribute through the sauce.

Swap the raisin

How well each one fits the dish's main ingredients (crab, sugar, ginger, pepper, garlic, clove, vinegar):

  1. Limefits better
  2. Lemonfits better
  3. Plumfits better
  4. Raisinthe original

Fit is the average pairing score against crab, sugar, ginger, pepper, garlic, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
