Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the concentrated mushroom flavor that the powder carries into the sauce.
Strong veal gravy
Adds savory body and depth to the sauce as its liquid base.
Cream
Adds fat and richness, giving the sauce a smoother, rounder texture.
Flour
Thickens the sauce by swelling with liquid and giving it body.

The step that matters

Drying the mushrooms thoroughly. Any remaining moisture can lead to spoilage or clumping in the stored powder, so the mushrooms must be completely dry before pounding and bottling.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original
