Beef Tongues

Ingredients

Directions

Cure

  1. Rub the tongue daily with salt, saltpetre, and sugar for five weeks.

  2. After curing, soak the tongue in cold water for 2-3 hours if it is very dry.

Cook

  1. Bring the tongue to a boil slowly in fresh water.

  2. Add carrots and savory herbs after skimming off the scum.

  3. Simmer until extremely tender, about 3.5 to 4 hours for a dried tongue.

  4. Peel the skin off easily once tender.

What each ingredient does

Beef tongue
Is the main meat, becoming tender through long curing and slow simmering.
Saltpetre
Helps cure the meat, keeping its pink colour and adding a cured flavour.
Coarse sea salt
Draws out moisture and seasons the meat during the curing period.
Coarse sugar
Balances the salt and adds sweetness during the cure.
Savory herbs
Add a savoury, aromatic flavour to the cooking liquid.

The step that matters

Skimming off the scum. Skimming foam as the tongue first comes to a boil removes impurities that would otherwise cloud the broth and taint the flavour of the finished dish.

Swap the carrot

How well each one fits the dish's main ingredients (beef, sugar):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Tomatofits about as well
  4. Carrotthe original

Fit is the average pairing score against beef, sugar. Candidates are from the same food group and used in at least 100 recipes.
