What each ingredient does

Beef kidney
Provides the main meat, which is cooked through after being sliced and fried.
Flour
Dredges the slices and thickens the sauce as it cooks with the butter and water.
Butter
Fat that is melted in the pan and combined with flour to form the base of the sauce.
Mushroom ketchup, lemon juice, or shallot vinegar
Adds acidity and savoury depth to balance the richness of the kidney and sauce.

The step that matters

Frying the kidney until cooked through. Kidney that is undercooked can be tough and unpleasant, while overcooking dries it out. Cooking the thin slices in a hot pan sears the surface and sets the texture quickly.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, flour, butter, mushroom):

  1. Shallotfits better
  2. Chivefits about as well
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper, flour, butter, mushroom. Candidates are from the same food group and used in at least 100 recipes.
