What each ingredient does

Cold beef or mutton
Provides the meat that is heated through in the thickened broth.
Rice flour or arrowroot
Thickens the broth into a light, glossy sauce that coats the meat.
Bones
Release gelatin and flavour into the broth as they stew.
Onion
Adds savoury sweetness and aroma to the stewed broth.
Carrot
Adds sweetness and body to the broth.

The step that matters

Thicken the broth gently. Starch thickens only when heated in liquid and then needs a brief boil to swell fully. Adding it to a cold or barely warm broth leaves lumps, and boiling too long can thin the sauce again, so the broth should be kept at a steady simmer while the starch is stirred in.

Swap the clove

How well each one fits the dish's main ingredients (beef, meat, onion, thyme, parsley, carrot, rice):

  1. Marjoramfits better
  2. Celeryfits better
  3. Cuminfits better
  4. Clovethe original
